When summer comes around, what type of food are you craving? Chances are, you’re not having a hankering for heavy foods. Light, bright, and delightful healthy fare is the name of the game at The Pool House, where we have plenty of delicious salads that will satisfy and fuel all of your summer adventures!

Here, we’ll take a tour of some of the sensational salads on the menu at The Pool House. These nutritious offerings taste as good as they’ll make you feel! Of course, you can’t be saintly all the time, so we’ll also talk about the most appropriate cocktail pairings for each salad, too!

APPLE & QUINOA SALAD:

Sweet and savory at once, this stunner of a salad is satisfying yet won’t weigh you down. Crisp slices of apple and quinoa are augmented with chickpeas, gouda, and roasted pumpkin seeds for a memorable salad experience.

WHAT TO DRINK WITH IT:

Since there’s a natural sweetness to this salad owing to the apples, one of the cocktails from the “Refreshers” section our drinks menu is the perfect pick. Whether you choose the Swedish Airmail (made with Absolut Elyx Vodka, lemon, Chandon sparkling wine, and lavender bitters), the Le Peche (made with Cîroc Peach Vodka, Aperol, lemon, and Chandon sparkling wine) or the St-germain Cocktail (made with St-Germain, champagne and club soda), you’re going to love this salad-and-cocktail combination.

KALE CAESAR SALAD:

All kale Caesar! (sorry, couldn’t resist). This creative take on the classic salad features kale prepared with an addictive lemon pepper dressing, parmesan, and sourdough croutons. It’s refreshing and creamy all at once.

WHAT TO DRINK WITH IT:

The tanginess from the lemon-pepper dressing means that this salad works excellently with a cocktail containing a little lemon. You might want to try it with one of our creative takes on the Mule cocktail! Several of our Mules contain zingy lemon, including the Sun-Ray (made with Tanqueray Dry Gin, lime, and ginger beer), the Blackbeard’s Delight (made with Maker’s Mark Bourbon, blackberry, lemon, mint, and ginger beer) or the Off to the Races (made with Basil Hayden’s Bourbon Whiskey, grapefruit, fresh lemon, and ginger beer).

MAINE LOBSTER COBB SALAD:

This is not your average Cobb Salad! This fancied-up version includes sweet, juicy Maine lobster surrounded with a melange of avocado, chopped romaine, bacon, egg, cherry tomato, and ranch dressing. This is a salad that makes for a satisfying entree.

WHAT TO DRINK WITH IT:

The natural sweetness of lobster meat works well with a cocktail kissed with a touch of sweetness. You may enjoy pairing it with one of our many Mojito offerings. Whether it’s the  Traditional Mojito (made with Bacardi Superior Rum, mint, lime, and soda), the creative Voconut Mojito (made with Bacardi Superior Rum, Voco Coconut Beverage, mint, lime, and soda), or the light and bright Pineapple Mojito (made with Captain Morgan Pineapple Rum, pineapple juice, mint, lime, and soda), you’re bound to enjoy a stellar salad and cocktail pairing.

MEDITERRANEAN PLATE:

While technically this isn’t a salad, since it includes several traditional Mediterranean salads in the mix, it warrants a mention on this roundup! This delectable plate, which is ideal for sharing, includes a variety of tastes, including cilantro hummus, tirokafteri (a spicy feta cheese dip), quinoa tabouli, marinated olives, and pita.

WHAT TO DRINK WITH IT:

Many of the flavors in the Mediterranean plate include an element of saltiness, such as the olives and the feta cheese. While this beverage hails from a different region, we can think of no better beverage to accompany salty flavors than a Margarita!
